Linda Pie ~ The Winter Version

Linda Pie ~ the winter version ~ could also be called raspberry, chocolate chip, cheesecake pie!

1 chocolate cookie pie crust (feeling lazy I used a store bought, feel free to homemake)

12 oz cream cheese (1 ½ regular sized bars)

1 whole egg

1 egg yolk

2 tsps vanilla

1/3 cup sugar

¼ cup raspberry jam

1/2 cup dark chocolate chips (aprox 1/4 bag)

Soften cream cheese to room temp (about 1 hr out of the frig).  Preheat oven to 350°.  Sprinkle most of chips into pie crust .  In a mixing bowl cream together the cream cheese, sugar, egg, egg yolk and vanilla; till smooth.  Pour the cream cheese mixture over the warm chocolate chips.  Swirl the raspberry jam on top of the cheese mix.  Use a butter knife to swirl it.  Sprinkle remaining chips around the outside edge and place a pile in the middle.  Bake at 350 for 45 – 50 minutes.  Cool to room temp (about 2 hrs) and refrigerate for an additional 2 hrs before devouring.
